Soccer Manager believes that most of the answers to your questions are covered within our Help.

Answer

yes, on the left column you change the players and on the right column you can select if your player will make runs during the game, and what kind of runs do you want him to make.

So, the < means that your player will be more defensive, while > means the opposite. Also, you will see those changes on the "Pitch Display - Starting XI & Line-up".
