Soccer Manager believes that most of the answers to your questions are covered within our Help.

When a gold member and playing in a european match, will this start reducing the players fitness

Answers
Simply go to your tactics screen and look under the box that is titled 'Fixture Rules'. It will tell you whether fitness is taken into account for your next game or not.
