Soccer Manager believes that most of the answers to your questions are covered within our Help.

Why, after selecting my own guys, the computer change my selection & pick up other players I did not wish to see playing the match?

Additional Details
I picked up my guys as usual (all 100% fit - Quarter final Champ Cup -). When I came back to check the result, I found out that the selection was completely different & the name of the coach was a random name, instead of mine.

This sounds like an in-game Bug. You will need to report this to SM by creating a Bug ticket. There is a link on the left of this screen for reporting any in-game Bugs.
